Cranberry Pecan Pie
Crust Ingredients:
Single crust pie pastry
Filling Ingredients:
3/4 cup firmly packed brown sugar
3/4 cup dark corn syrup
1/4 cup LAND O LAKESr Butter, melted
3 large eggs
1/8 teaspoon salt
1 cup dried cranberries
1 cup pecan halves
1. Heat oven to 350øF. Place pastry in 9-inch pie pan. Crimp or flute crust; set aside.
2. Combine all filling ingredients except cranberries and pecans in large mixer bowl. Beat at low speed until well mixed (1 to 2 minutes). Stir in cranberries and pecans by hand.
3. Pour filling into crust. Bake for 50 to 55 minutes or until filling is set. If crust is browning too quickly, cover edge of crust with 2-inch strip of aluminum foil.
